This is the dish Lao Sze Chuan is known for: bite-sized chicken fried until crackling-crisp, then tossed with a mountain of dried red chilies and Sichuan peppercorn. You dig the chicken out from under the peppers — the chilies perfume the meat with smoky heat rather than scorching it.
